  1. Set up your crock-pot and add the chicken broth, chicken, beans, salsa verde, cumin; salt, and pepper, and stir until well blended.
  2. Add your whole chicken breasts.
  3. Cook 8 hours on LOW or 4 hours on HIGH.
  4. Shred chicken breasts with a fork, stir and add garnishes before serving.

Eating seasonal is the best because you eat it while it’s fresh and you eat it ’til it’s gone. I currently have an abundance of tomatillos and chilies in my garden so this recipe is a must have and my family LOVED it! This salsa verde slow roasted pork is a Southwestern-inspired favorite meal in our home. This slow cooked porkis so fork-tender everyone will enjoy it.

  1. Heat a large skillet over medium-high heat.
  2. Season the pork with the salt and brown in the skillet for 2 to 3 minutes per side.
  3. Transfer the pork to a 6-quart or larger slow cooker.
  4. Pour the salsa verde sauce evenly over the pork.
  5. Cover and cook until the pork is tender normally 7 to 8 hours on the LOW setting.
  6. Serve the finished pork chile verde over rice.
  7. Garnish with freshly chopped cilantro.
