Apple Blackberry Almond Crisp

This delicious and gorgeous apple dessert was a hit!!! Atop the apple-blackberry mixture was a crisp almond topping that is made with flour, brown sugar, honey roasted sliced almonds, and butter.

  1. Pre-heat an oven to 350F. Butter a large baking dish (approximately 8 x 8 or use an unbuttered tart dish).
  2. In a large bowl, combine the apples, blackberries, lemon zest, lemon juice, brown sugar, cornstarch, and cinnamon. Stir well to combine.
  3. Pour into prepared baking dish.
  4. In another bowl combine the flour, brown sugar, butter, almonds and pinch of salt. Using your hands mix well making sure the butter is incorporated until mixture is nice and crumbly.
  5. Spread the topping over the apple and blackberry mixture and bake for 45 – 50 minutes or until the apples are tender and the fruit juices in the crisp are bubbling around the edges.
  6. Transfer the baking dish to a wire rack and cool for 10 to 15 minutes. Serve warm with a scoop of vanilla bean ice cream.

  1. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  2. Clean the peaches, remove the skin, and dice them into small chunks.
  3. Whisk flour, salt, baking powder, eggs, milk, and butter together in a bowl until smooth.
  4. Pour mixture over the peaches then fold in peaches.
  5. Drop spoonfuls of the dough, working in batches, into the hot oil and fry until fritters are golden brown on all sides, about 5 minutes.
  6. Remove fritters with a slotted spoon to a paper towel-lined plate to drain.
  7. Sprinkle powdered sugar over the fritters until evenly coated. Serve warm!
